Wellspring Mushroom Patties

We were having some friends over for lamb burgers last week — since we raise lamb, it’s a staple in our house — but realizing two of the friends are vegetarians, we decided to try these out. We used a similar recipe to our lamb burgers but needed to add a little flour and double the cooking time, and they worked out great. We hope you enjoy them!
Ingredients
1 pound sliced fresh mushrooms (you can mix varieties together)
2–3 tablespoons olive oil
¼ cup chopped chives (or allium equivalent)
¼ cup chopped parsley
1 teaspoon salt
½ teaspoon black pepper
2 large eggs, beaten
½ cup flour (or corn meal if preferred)
½ cup oil
Preparation
Roast. Preheat the oven to 350°F. Roast mushrooms on a lightly oiled baking sheet for 35 minutes, or until soft. Cooking time may vary with the variety of mushrooms you’re cooking.
Blend the seasoning. While the mushrooms are cooking, mix the herbs and spices together in a food processor.
Combine. Add the mushrooms when done, then add the eggs and flour and stir by hand.
Shape. Hand shape into golf ball size patties and flatten to your desired thickness.
Bake. Bake at 350°F for 30–40 minutes, or until golden brown.
Serve. Serve on your favorite bun or on top of a salad. These go great with a tahini sauce or your favorite aioli.
Notes & Variations
Mushroom swaps: a mix is best here — oyster for texture, shiitake or king oyster for depth. This is a good way to use up a mixed week’s harvest.
Cornmeal in place of flour makes these gluten-free and gives a slightly crisper edge.
If the mix is too loose to shape, add flour or cornmeal a tablespoon at a time until it holds.
These can be pan-fried instead of baked for a crustier result, though they need a gentler hand when flipping.
Storage
Keeps 4–5 days in the refrigerator and freezes very well. Freeze the shaped raw patties separated on a tray, then bag them once solid, and bake from frozen with about 10 extra minutes.
