Crispy Mushroom Carnitas Tacos

A stovetop take on carnitas, done entirely in one skillet in about fifteen minutes. Shredded mushroom is dry sautéed until the strands tighten, glazed with citrus and spice, then left alone in a single layer so the edges catch and crisp. Those crispy bits hold the love.
Ingredients
½ lb comb tooth, lion’s mane, or king oyster mushrooms
½ tbsp avocado oil
1 tsp ground cumin
1 tsp smoked paprika
½ tsp dried oregano
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
Juice of ½ orange (about 30 ml)
½ tbsp tamari or soy sauce
Juice of ½ lime
½ cup white onion, finely diced
¼ cup fresh cilantro, chopped
8 small corn tortillas, avocado, and salsa, for serving
Preparation
Shred the mushroom. Pull apart into thin strands with your fingers.
Dry sauté (about 9 min). Dry skillet, medium-high. Press flat and cook until the mushroom releases its water, the liquid fully evaporates, and the strands brown and shrink by about half.
Toast the spices. Push the mushroom aside, add the oil, then stir in the cumin, paprika, oregano, garlic powder, salt, and pepper. Toss about a minute until fragrant. Then add in the onion.
Glaze (about 3 min). Pour in the orange juice, tamari, and lime juice. Simmer until the liquid reduces and glazes the strands with nothing pooling.
Crisp the edges (about 3 min). Spread into a single layer and let it sit mostly undisturbed so the edges catch and crisp, flipping only once or twice.
Serve. Pile into warm tortillas, top with cilantro and onion, and finish with extra lime, avocado, and salsa.
Notes & Variations
Mushroom swaps: comb tooth and lion’s mane fray into the finest strands. King oyster shreds nearly as well with a fork down the stem. Blue and golden oyster tear into strips instead, cook faster, and crisp more readily. For blue and golden oyster, shorten the dry sauté to about 6 minutes and watch them closely at the end.
Resist stirring during the last step. Contact time with the pan is what makes the crispy edges, and constant motion gives you soft glazed mushrooms instead.

No orange on hand? A splash of any citrus plus a pinch of sugar gets you close; the sweetness is what caramelizes at the edges.
Storage
Keeps for 4–5 days in the refrigerator and freezes well. Reheat in a hot dry skillet to bring the crispy edges back.
